壓力蜜處理法

這款豆子採用壓力蜜處理法,平均的發酵時間是 24 小時,之後會送到溫室儲放 4 天,以便去除果膠層;接著放置在高架日曬床 18-20 天,進行乾燥作業,最後再把咖啡放入容器密封。

機器博士‧日曬豆專家

農閒時,莊園主把精力放在研究機器跟咖啡上,附近的農民都稱呼他「機器博士」和「日曬豆專家」。Sanches 認為咖啡的好壞從咖啡樹本身開始。雖然機器可以把好壞分開,但是如果從源頭的種植開始管理,就不需要耗費大量機器作業了。對他來說,用愛去灌溉這些咖啡樹,就是他所能感謝上蒼的最好方式。
